Impress your guests! Guacamole


Hello/ Namaste/Assalamualaikum/Sat Sri Akal :)

I hope you all are doing well. I am sure you guys love and enjoy cooking as much as I do. I know cooking can be time consuming and boring sometimes. I would say try to don't over exert yourself while cooking because that may lead to you losing interest. Also try innovating and experimenting every time you cook and it won't be boring anymore.

Follow any food channel or your favourite chef, draw inspirations from their cooking. Try their recipes and enjoy the whole world of cooking. I personally like Rick Stein, I think he is not only a brilliant cook but also an amazing host. I love all of his series. Also his cooking methods, ingredients are so simple and easy to follow. And the way he picks up traditional recipes from the places he visit is just amazing. I wish I could do that one day, food and travel tourism.. Phew!

But here we are now, in our own lives, sitting at at homes and reading this post :)
Today I have a very simple recipe for you. You may already know it but I am sharing it anyway so that after a few years, I can turn back and look into it if I forget.

Its called guacamole, it is like a Mexican chutney, you can eat it with nachos, on a bagel, with quesadilla etc. It is really easy to make and you can store it for somedays as well.
Its one of the dishes I like making when I have guests over because guacamole along with nachos make a great starter.

Lets  get started now. Here are the ingredients.

Ingredients:
                    
Avocado2
Chopped Onions1
Chopped Tomato1
Chopped green chillies1
Chopped coriander1/4 bunch
Lemon juice1tbsp
Chilli powder1/2 tsp
Saltto taste
        
Method:


  1.  Take the avocado and peel it.
  2. Chop it roughly and put it in a bowl.
  3. Now mash it with a fork if its ripe enough, if not you can grate or grind it as well.
  4. Now to the mashed avocado, add chopped onions and green chilies
  5. Add tomatoes
  6. Now add coriander
  7. Add lime juice, salt and chilli powder and mix
  8. Serve with Nachos
  9. Enjoy!!!

Masala sweet corn chat!

Hi All,

After a looong time, I thought today I really had some free time. And hence I will utilise this time to clear the backlog of my recipes. But hahaha never had that happened.. Whenever I set out to write recipes, there emerges some or the other kind of work. This time we had to goto a birthday party, we had a really nice time but lost all that precious time of mine :( but nevermind I will write this one and complete the rest some other day.

Do you guys like chaat? which one is your favourite?? I think being indian and being brought up eating tangy food, chaat are everyone's favourite. Aloo chaat, aloo-chana chaat, papri chaat etc etc, the list is endless. Also it is really easy to make your own version of chaat, just mix some of your favourite ingredients together and you can have your own chaat your way.

Here I am going to share one of such self made chaat recipes. Its called masala sweet corn chaat.
Sweet corns have always been my favourite they are healthy and nice to eat as well. Hence I try to put them in possibly each and every item I can. This chaat recipe is easy to make, healthy as well as filling as well. It is a bit unconventional chaat because it should be served warm as compared to the most which are served cold.

Lets get started

Ingredients:


Sweet Corn1/2 cup
Chopped onionshalf
Chopped tomato1
Chopped cucumberhalf
Desiccated coconut 2 tbsp
Mustard seeds1tsp
Curry leaves6/7/2015
Chilli powder1tsp
Jeera powder1tsp
Garam masala powder1tsp
Lemon juice2tbsp


Method:
  1. Take a pan and put a tiny bit of oil in it
  2. When the oil is hot, add mustard seeds
  3. When mustard seeds crackle, add curry leaves
  4. Immediately add corn and saute
  5. Add salt, chilli powder, jeera powder and garam masala and toss
  6. Switch off the gas and let mixture cool a bit and add dessicated coconut
  7. Put the corn mixture in a bowl and add chopped onion
  8. Add chopped cucumber, tomatoes and lime juice
  9. Serve while still warm
  10. Enjoy :)

Mixed vegetable potato pancakes!

How are you doing? I hope you all are well.. So am I. I have been cooking new recipes everyday these days. Turning more and more into a passionate foodie.
Since my childhood until now, I have had quite a few passions :P When I was young I was quite passionate about dancing but as I didn't do much for it, I think it may have faded although, I still find myself tapping my feet to the tunes on some special occasion.
But I will not let the cooking passion of mine fade away in any case. I literally spend all my free time, either looking through the internet for new food recipes or watching food  network on TV.

I like drawing inspirations from different types of cooking and experiment in my kitchen.
I wish I could turn it into my profession some day.

Moving on, the recipe I have for you in store today is also one of the experiments I have performed in the kitchen. Its called Potato Pancake.
Pancakes are widely made and eaten in America. Mostly made of plain flour. here in my recipe I have replaced wheat flour with potato mash and added vegetables to it.
So let get started with this simple and interesting recipe.

Ingredients:
     
    
1 Potato mash  1/2 cup
2 Plain flour 1/2  cup
3 Egg 1
4 Chopped Onions 1 small
5 Chopped beans  a handful
6 green chilies 1
7 Coriander a handful
8 Grated Cheese a handful
9 Chili powder 1 tsp
10 Salt 1 tsp
11 Butter 2 tsp




Method:

  1. Take a bowl and put the chopped onions in it.
  2. Add chopped beans
  3. Now add potato mash powder
  4. Add flour
  5. Bring the mixture together
  6. Add chilli powder
  7. Fresh chopped coriander
  8. Add cheese
  9. Add some 1/2 cup of milk to bring the ingredients together
  10. Heat a pan and melt some butter in it
  11. Take a spoonful of the mixture and let it cook
  12. Heat it from both sides
  13. Serve hot

Heavenly but quick! Paneer butter masala


Heeewwwoooo People,

I hope you all good, eating , cooking and enjoying life :) I am doing well too.

Are you scared of hosting parties?? Calling people at home and cooking lots of food? I was scared of doing that myself, until I discovered that you can be a great host with minimal effort. Do some smart cooking and you are sorted. Smart cooking means the cooking dishes which takes less time and are actual party dishes.

I have hosted a few dinner parties now and have made such simple recipes and my guests have been super delighted. Some of them even asked for the recipe.:)

Hence I'll share one of those simple Indian curry dish recipe with you, which does not involve cutting onions, tomatoes etc etc and then cooking them for long hours. It will just require 20 mins and will taste like you have ordered it in a restaurant somewhere.

The recipe is called Paneer Butter Masala


It is a thick buttery an creamy tomato gravy with paneer in it. Can be eaten with both roti, naans or rice.

Lets get moving to the ingredients now

Ingredients:

1 Paneer  250 gms
2 Butter A blob
3 Ksoori methi 2 tbsp
4 Tomato puree 4 tbsp
5 Tomato ketchup 2 tbsp
6 Coriander Powder 1tsp
7 Garam masala powder 1tsp
8 Chilli Powder 1tsp
9 Turmeric powder 1tsp
10 Bay Leaves 2-Jan
11 Cloves,pepper, cinamon 1-2 each
12 Milk 1 glass
13 Fried Onions  2 tbsp
14 Salt to taste

Method:


  1. Take an empty bowl
  2. Put Coriander powder, Chili powder, garam masala and turmeric powder
  3. Add the ketchup
  4. Add kasoori methi
  5. Add tomato puree and 1/4 glass milk and stir
  6. Take a pan and add butter
  7. Add bay leaves, cloves, cinnamon and pepper corns
  8. Add the ready brought fried onions, you can get them in super market
  9. Saute for a while
  10. Fry and add the prepared mixture to the pan and stir at low heat
  11. When the mixture leaves its sides, add the remaining milk and stir.
  12. Add the Panner cubes , bring it to a boil and add salt to taste
  13. Serve with naan/ rotis or chapattis
  14. Enjoy :)

Veggie Delight! Kidney bean burger


Hello Dear People,

Hope you are all doing good, sorry this post is arriving really late after the previous one. I am so indulged in cooking and eating sometimes that I forget to take pictures for you ;) . I'll try my best to control my extreme hunger and click pictures before I eat it :D

Moving on, I know the festive season is about to kick off  which means no non veg for days and days (at least for me) :P
My dear husband get really upset when this happens because he refers to vegetarian food as Ghaas-Phoos (grass) which has nothing interesting to eat. but little does he know about the vast variety  and potential of vegetarian cooking.
One more thing that concerns people about veggie cooking is that it takes a lot of time but that's a myth too. Veggie food can be prepared as easily as any other.

Not wasting too much time now, lemme introduce you to the new interesting veggie dish, The Red Kidney Bean burger. Its the recipe for times when you want to eat something western , like a burger but not meat.

Doesn't that look yummy?? I am sure it does. Lets now quickly get on to the recipe

Ingredients:     

1 Red kidney beans (boiled) 1 can (200gms)
2 Onion 1
3 Green chili 1
4 Grated Carrot 1
5 Peas handful
6 Sweet Corn handful
7 Salt to taste
8 Pepper to taste
9 Cumin powder 1tsp
10 Flour 1tbsp
11 Cornflour 1tsp
12 Semolina 2tbsp
13 Red chili powder 1tsp
14 Burger buns 1
15 Lettuce 1leaf
16 Tomato 2-3 slices
17 Any sauce(I used chipotle) to taste


Method:
  1. Take a pan and splash some oil on it
  2. Once the oil is hot, put chopped onions and green chilli
  3. Put salt, pepper, red chilli powder , cumin powder and saute for 2 mins
  4. Add grated carrots, peas and corn and saute for another 5 mins and let the mixture cool
  5. Take the boiled beans in a bowl
  6. Mash them up
  7. Add the prepared veggie mix to the mashed beans
  8. Add plain flour and cornflour to th mix and mix everything together
  9. It should become like a dough
  10. Make some burger size flattened balls
  11. Roll it in dry semolina if you want bread crumb like coating(you can skip this step if you want)
  12. Heat the same pan and splash some oil and put the handmade burgers on it
  13. Flip them when brown 
  14. Take the burger bun, heat it a little and put it on a plate
  15. Put lettuce
  16. Put the burger
  17. Sauce
  18. Tomatoes
  19. Cover it
  20. Enjoy
