Chatpata Bombay Sandwich!


Hello my dear friends,

Its strange how I keep addressing you, sometimes as friends, sometimes as readers, sometimes as foodies but I have no idea who you guys are. Which part of the world you live in and what your interests are. This is how small internet has made our world these days. I love writing about the food I cook and sharing it with people hence I keep posting my recipes in the hope that at least some of you might find it helpful:)
I will be glad if anyone of you can post me their interests, hobbies or just introduce themselves to me, I will have new friends that way.

Coming to the food topic, a few days ago there was festive season in India which means no non vegetarian cooking for a few days :P I was perfectly fine with it but my husband finds it really difficult. But this time, he also didn't realise where all that time flew away. This is because there are 1000's of varieties of vegetarian dishes you can make. As my favourite chef  Rick Stein says, "I am mesmerized to see the variety of vegetarian options Indian cooking offers, its a country where being non-vegetarian is being an exception " and I completely agree, infact I was a vegetarian until my early 20's and never realised I was missing out on anything.. and then I discovered KFC :P

Jokes apart, the recipe I am writing today is most popular in Mumbai, Pune and rest of Maharashtra.
You can find them being sold at every snack shop and are a popular choice among people.
I had my first encounter with it whenI was in Pune and I loved it from the very first bite. Its called Bombay Masala Sandwich. Vegetarian sandwich  but I bet it can beat any non-veg sandwich in the world.

Lets get started with it.

Ingredients:


1White Bread7-8 loafs
2Boiled potatoes3-4
3Capsicum1
4Cucumber1/2
5Tomatoes2
6Onion1
7Butter5-6tbsp
8Grated Cheese1/2 cup
For Mint Chutney
9Mint few leaves
10Coriander1/2 bunch
11Green chillies1
12Saltto taste
13Garlic cloves1
14Gingertiny piece
15Lemon juice1tbsp
16Water4-5 tbsp
For Masala
17Chat Masala1tsp
18Cumin powder1tsp
19Garam Masala1/2 tsp
20Dry Mango powder (Amchoor)1/2 tsp

Method:

For chutney, take a blender and blend all the ingredients together to form a smooth runny chutney.



Mix the ingredients of Masala together to make a chatpata dressing.

To Prepare the sandwiches:


  1. Chop the vegetables as shown in picture
  2. Take two slices of bread and apply butter on top
  3. Then apply chutney
  4. Put the boiled potatoes on top

  5. Dress with the masala
  6. Put cucumber and dress with masala
  7. Put onions and again dress with masala
  8. Now put the other slice of bread 
  9. Put capsicum and tomatoes and dress with masala
  10. Put lots of cheese and cover with another slice of bread
  11. Heat a grill pan and sear the Sandwich from both sides

  12. Remove when its golden brown from both sides
  13. Serve with salad and chips
  14. Enjoyyy!
